Here are a couple of his favorite recipes for those cooks who want to create gourmet restaurant meals at home:

Shellfish Melange in Puttanesca
24 oz. Gorji Gourmet Foods® Puttanesca Sauce
8 oz. white wine
16 wild-caught Texas brown shrimp cleaned and deveined
16 fresh clams in shells
16 fresh mussels in shells
6 oz. scallops
4 oz. calamari cleaned
sprigs of fresh basil

Combine ingredients except scallops and calamari and heat about 2 minutes until shrimp becomes firm. Add scallops and calamari and continue cooking another 2 minutes.

Total cooking time of shellfish is 4 minutes.
Plate and garnish with fresh basil.
Serves 4

Pan Seared Recipe for Tilapia
Put 2 tablespoons of Gorji Gourmet Foods® Dipping Oil & Marinade Primer in the pan, 1/2 teaspoon butter to season and add the first fillet when oil is hot (high heat). Cook for about 2 1/2 minutes depending on the size, then turn and brown on other side.

Serve immediately, topping with melange above or by itself with fresh lemon and Gorji Gourmet Foods® Spicy Remoulade as accompaniment.
