Nothing says summer like a cold, creamy scoop of gelato, and Cathi Iannone’s vegan version of the popular frozen dessert bested the competition to claim the People’s Choice prize in Sunrich Naturals’ SoL™ Sunflower Beverage“Embrace the Sun” summer recipe contest. The New York, NY-based designer and creator of the Brooklyn Ragazza food and travel blog’s winning recipe combines SoL™ with homemade pistachio paste, avocados, and almond flavoring for excellent pistachio flavor and outstanding mouth-feel. Salem, WI-based home cook foodie Kellie Foglio put a healthier spin on a Northern Thai classic noodle dish by using SoL™ instead of coconut milk as the base for her spicy and luscious Khao Soi, wowing the judges and earning her the Judge’s Choice prize.

Each winner will receive a $500 gift card to Williams Sonoma.

Sunrich Naturals’ “Embrace the Sun” summer recipe contest launched on April 27, 2012 and accepted entries through May 31 via the Sunrich Naturals’ Facebook page. Contestants were required to use SoL™ as a key ingredient in their recipes. In addition to receiving the $500 gift cards and bragging rights for their winning creations, Iannone and Foglio will have their recipes featured on the Sunrich Naturals web site, blog and Facebook page.

“I found the creaminess of SoL™ to match the creaminess that dairy milk would offer, but without the heaviness that dairy can leave behind,” said People’s Choice winner Cathi Iannone. “SoL™, in tandem with the creamy avocado, provided the perfect base consistency for the gelato. Additionally, as I was making this dessert, I began generating other ideas for future SoL-based gelato flavors, such as adding canned coconut milk, or cocoa powder, instead of the pistachios. Those two flavor ideas are up next on my gelato list. Adding fruit would be a great idea, as well!”
