Lake Champlain Chocolates has developed two new 70% dark chocolate bars: Peru Organic Bar and Cherry Peruvian Organic Bar (both SRP $4.59.) Made with organic, single-origin cocoa that is grown sustainably on plantations in the Apurimac Valley of Peru, the bars feature a custom recipe creating a deep, complex, dark chocolate with forward juicy berry tones, slight sourness, and an earthy quality. The Cherry Peruvian Bar is made with organic, tart, dried cherries from Northern Michigan and complements the fruitiness that is already present in the Peru Organic Dark Chocolate Bar. Madagascar Bourbon vanilla beans, considered the finest and most balanced vanilla bean available, helps meld the complex elements of the Dark Cherry bar together.
