Grand Hyatt Denver general manager, Greg Leonard, announces today the opening of Pub 17 on Welton Street. Located just off of the corner of Welton and 17th Streets, the mainline for business, Denver’s newest pub captures the mood and flavor of the Mile High City by providing neighborhood microbrews, regional wine and high plains culinary fare. It is the perfect complement to Hyatt’s recently introduced concept: Food. Thoughtfully Sourced. Carefully Served.
Here, in the cradle of the pioneer spirit, Denver brew pub, Pub 17 serves up a bounty of locally grown produce, artisan cheeses and premium meats. Guests are invited to stay inside their comfort zone with a selection of expertly prepared traditional foods, such as the piled high Mile High Reuben or Chef de Cuisine Jay Leandro’s unique take on Mac N’ Cheese. The menu also allows a venture into the unfamiliar with a western-style Herb Roasted Bone Marrow to name just one. All of the dishes go perfectly with Chef’s homemade Brown Ale Pepper Jam. Every signature dish the chef has created is styled to complement a long list of local microbrews (some with very limited release and difficult to find anyplace else) or a western slope award-winning vintage.
“Organic” best describes the flavor of the surroundings as well. Textural lighting casts a welcoming glow over the room filled with custom art and stacked mirrors reflecting the city surroundings. That is clearly evident in a barrel from the local distillery, Stranahan’s, which carves out the Denver skyline, adorning the wall as a reminder that some of the best beverages made originate right here in Colorado. Seating is deep and restful, the soft hues an easy backdrop for conversation; ideal for closing a deal or celebrating a victory. Regardless of the purpose, it is the perfect setting for making connections.

Pub 17 on Welton replaces the former 1876 Restaurant and is located inside the downtown Denver luxury hotel, Grand Hyatt Denver. It offers three meals daily from 6:00AM – 11:30PM. Discounts on appetizers and beverages are available during Happy Hour from 3:00PM – 6:00PM and again from 11:00PM to 1:30AM. A la carte selections are joined by Saturday and Sunday bunches, served from 11:00AM-4:00PM, providing a special selection of plated entrees complemented by a buffet of appetizers and an array of desserts.
