Santa Fe's Inn and Spa at Loretto Announces New Executive Chef: Luminaria Restaurant & Patio Welcomes Brett Sparman

The iconic Inn and Spa at Loretto in Santa Fe's historic downtown announces the arrival of its new Executive Chef, Brett Sparman. The chef made his debut on the culinary scene in Dallas, Texas at some of the city's most prestigious restaurants, including the Dallas Rosewood Hotel's Crescent Court and Nana's Kitchen. Sparman is known for his straightforward approach to sophisticated foods.

The Inn and Spa at Loretto, managed by Destination Hotels & Resorts, announces it has hired Brett Sparman as their Executive Chef for the Luminaria Restaurant & Patio. Chef Sparman brings twelve years of expertise to the award winning Luminaria Restaurant and Patio. Having worked in some of Texas’ most respected restaurants, his work in varied kitchens with different cuisines and styles lends him great flexibility in creating food that is new, stimulating, and delicious. Chef Sparman is known for using a simple approach to food to allow the ingredients to speak for themselves without over complicating the plate with too many flavors.

“We are inspired by and excited by Chef Sparman’s new position at the Inn and Spa at Loretto,” said Dana Ortega, Marketing Director for the Loretto. “He brings a bright note to beautiful food in an incredible setting.”

Sparman served as the Executive Chef at the Foundation Room in Houston as well as spending many years working alongside Chef Nobu Matsuhisa at the Dallas Rosewood Hotel’s Crescent Court. Additionally, he spent two years as the Executive Sous Chef at Nana Kitchen in Dallas, which is listed in Gourmet Magazine as one of the Top 50 Restaurants in North America.

“The Inn and Spa at Loretto and its culinary programs truly embody the kind of straightforward but sophisticated food that Santa Fe is known for, and I’m delighted to be here,” said Sparman. “In this day and age we are so overwhelmed with technology—I think food is the last real thing that can make us feel complete.”

When Sparman is not in the kitchen he enjoys spending time with his wife, Steffani Marie, and his son, Ryder Otis. They love to spend time outdoors riding in his Vintage 76’ Honda CB 750, rubbing elbows with the outlaws in Madrid, New Mexico. When he needs to relax he sits back and listens to his extensive record collection.
