Pentec Health, a developer of proprietary nutritional therapies for patients suffering from chronic kidney disease (CKD), announced today that it is sponsoring innovative cooking demonstrations as a way for dietitians, nurses, and dialysis technicians to earn continuing education units (CEUs). The classes give these healthcare professionals an interesting and interactive way to enhance the quality of care for CKD patients.
The program features live cooking demonstrations by kidney disease patient and professional chef, Duane Sunwold, and features protein-enhanced meals which help increase levels of albumin, a key indicator of nutritional status in kidney disease. Low albumin can lead to hospitalization and carries with it a high risk for mortality.

Recipes Designed by Kidney Disease Patient
Chef Sunwold, Culinary Arts Instructor at Spokane Community College in Washington State, explains that the recipes feature wheat gluten made into seitan, which is low in saturated fat, salt and sugar. These recipes were initially designed with his own dietary needs in mind.
“As a CKD patient, I knew I had to change my diet in order to have a big impact on my quality of life,” he says. “Dietitians are unsung heroes. They are the reason why I am alive and well today. They do a great job of recommending dietary and nutritional changes; however, those changes are difficult to make unless they taste good. That’s where I come in.”
Pentec’s program features Chef Sunwold who teaches his recipes to chefs at restaurant venues where the CEU programs are being held. Each participant is not only taught how to prepare the meals, but also gets to taste the dishes. Each meal consists of an entrée, side dish, bread and dessert. Following the program, attendees are given a recipe book that outlines the dishes sampled at the tasting, as well as several other menu items which dietitians can then share with their patients.
“Once the attendees taste the dishes, they’re sold. This makes it easy to convince patients that their diets can be altered to improve their health and still be flavorful,” continues Chef Sunwold.
