The idea for the Baking Steel was born after reading excerpts from Nathan Myhrvold's, Modernist Cuisine. Brick ovens generally cook at or around 800 degrees, much hotter than the average home oven which usually reaches temperatures of about 500 degrees. A steel sheet is more conductive than the typical brick oven's stone so it can cook fast at a lower temperature. Investing in a brick oven can cost thousands of dollars. The Baking Steel recreates brick oven results at a cost more consumers can afford.
The overwhelming response on Kickstarter, led Stoughton Steel to introduce the Baking Steel Big this week, as an additional pledge opportunity. The original Baking Steel measures 16x14x1/4 inch and is very manueverable for the home cook. The Baking Steel Big, measuring 16x14x1/2 inch and approaching 30+ pounds, is for the serious pizza aficionados. Seasoned with a proprietary oil blend, both steels arrive ready to use from day one and produce heavy-weight results.
