The levels of alkaline and acid in water determine pH balance. Water has a natural pH balance of 7, on a scale of 0 to 10. The higher the pH balance, the more alkaline that is present. Consuming foods like meat, dairy, sugar and some citrus, tips the scale towards the low end, and that is what causes things like heartburn, indigestion, asthma and even esophageal cancer.

“Most diseases start when our pH levels drop below a 7.0," says Merrily Milmoe, a certified massage therapist and holistic health researcher at the Healing Arts Studio in Mill Valley, Calif. “Your blood’s pH level should stay within a certain range of alkalinity to remain healthy.”
