In a constant mode of innovation, Gilomen worked diligently with Dan Donahoe and Jordan Kivelstadt of Free Flow Wines to re-define the environmental standard for wine service in America’s dining spaces by going beyond recycling to whole re-usability. Both LYFE and Free Flow are committed to working with vineyards that are highly evolved in their sustainable business practices. The result is local wines served on tap using a perfected barrel methodology to drastically reduce the carbon foot print.

Pinot Gris “Acrobat” from Kings Estate, OR

Pinot Noir - Au Bon Climat Winery, Santa Barbara County

Rhone Blend “Cuvee Le Bec” - Beckmen Vineyards is a family run, 100% estate grown winery with over 150 acres of vineyards in the Santa Ynez Valley. They were one of the first vineyards to practice Biodynamic farming in Santa Barbara County in 2002 and now has 125 acres of certified vineyards by far the most BD certified acreage in the county. Recognized as a leader in Rhone varietal wines from California Beckmen was named "Top 100 Winery in the World" by Wine & Spirits Magazine in 2007, 2010 and 2011.

Chardonnay - Trefethen Family Vineyards, Napa Valley This 38th vintage of Chardonnay is a true classic, with mouth-feel balanced with acidity and a stony minerality which makes for a very food-friendly wine. Trefethen Family Vineyards is both certified Napa Green Land and Napa Green Winery and is a leader and a pioneer in "sustainable" vineyard and winery practices.
Beginning in September, LYFE will host weekly “Toast to LYFE” Wine Wednesday events, allowing guests to sample these delightful wines, learn more about sustainable and biodynamic growing and engage with the local experts.
LYFE Kitchen’s Wine Selection Process
The process began with an extensive evaluation of more than 50 wineries that are offering a “Wine on Tap” program. The wineries were judged on six criteria:
1. Menu Compatibility: How the varietals that the winery offered would pair with the LYFE Kitchen menu.
2. Taste Profile: How the “taste profile” of each wine compared to the taste profile associated with its varietal, as well as the expectations of our guests regarding that standard taste profile.
3. Environmental Leadership: The environmental commitment of the winery. Preference was given to wines with 100 percent bio-dynamically and organically grown grapes and wineries with 100 percent organically grown grapes.
4. Premium Wineries: The winery’s rating as it relates to finest industry and consumer reputation to establish customer confidence in the program.
5. Affordability: The cost basis of the wine, so that LYFE could provide premium wines that are reasonably priced wine to meet the expectations of LYFE’s guests.
6. Distribution Capabilities: The winery’s distribution system and ability to expand the system, to accommodate LYFE’s future growth plans.
