Extra virgin olive oil is composed of many different compounds and fats that provide beneficial nutritional properties. The fat, also known as monounsaturated fatty acid, is the only fat that is derived from a fruit. Laden with antioxidants called polyphenols, olive oil helps raise HDL (good) cholesterol and lowers LDL (bad) cholesterol,” she says.
Olive oil also contains some elements that are essential to the body because humans cannot produce it. This element is polyunsaturated fatty acid. This is known as an “essential acid” due to the fact that humans cannot produce it – it must be consumed.
Since extra virgin olive oil, such as organic olive oil, is a huge staple in the Mediterranean diet, Firenze also recommends adopting this diet for it health benefits, such as lowering cholesterol. “Extra Virgin Olive oil is the cornerstone of the Mediterranean Diet. Along with fruit and vegetables, whole grains, fish and poultry, the Mediterranean Diet is the best defense against high cholesterol, high blood pressure and excess body weight (the three main factors contributing to heart disease).”
