Lliterally translated, sous vide means "under vacuum" All poultry and seafood portions are now individually vacuum-sealed with their seasonings and sauces inside the bag, and then placed in a temperature-controlled water bath.

Because the water temperature is controlled in the machine with precision, whatever is immersed in the water will achieve the same temperature as the water through and through, given enough time. As a result, the method is time-consuming and requires additional steps in the bringing a meal to completion. "I wasn't sure that this approach was going to be worth the added cost in time and labor, but now that we've finished running our tests, I can only say that the difference in the flavors is inestimable," Mr. Lew adds.
