In response to the frequent food recalls and E. coli outbreaks, 360training.com has developed a Hazard Analysis Critical Control Points (HACCP) accredited course for retail food establishments, such as restaurants, bakeries, fast food chains, cafes, caterers, and hotel kitchens. While most HACCP courses focus on the industrial side, foodservice establishments can benefit from HACCP as well. The training teaches learners not only to prevent biological hazards, but also to maintain records that show that any future reports of foodborne illness did not originate in their kitchen.

After the E. coli outbreak in 1993, Jack in the Box established the HACCP methodology to target suppliers, transportation, restaurant staff and corporate infrastructure. Suppliers are randomly sampled and fired if they continue to test positive for harmful bacteria. Jack in the Box has since received the Black Pearl Award from the International Association for Food Protection and the NSF International Food Safety Leadership Award for outstanding food-safety achievements.

The course consists of online lessons and quizzes, which culminates in a proctored exam. Once learners have successfully completed the course, they will understand how HACCP is applied through Active Managerial Control (AMC) to establish a functional food safety management system.
