Fewer shell layers in panned confections without any loss of quality will lead to big savings for candy and gum makers.

Reducing the number of shells in panned confections lowers the expense of manufacture. Confectioners can modify existing formulations for maximum cost in use savings and achieve a similar product while using fewer raw materials as compared to gum arabic.

New Cost Savings Possibilities
With TicaPAN Quick Crunch, candy and gum makers need fewer “coats” or layers of panning agent to get the same outcome on the shells of gum and candy. For example, a confectioner using 400,000 pounds of gum arabic at $1.25 per pound could use 200,000 pounds of TicaPAN Quick Crunch priced at $1.35 per pound and still save $230,000.00 per year. While TicaPAN Quick Crunch is only 1%-3% of the entire formulation, sugar and sugar alcohols constitute 60-75% of the shell.

Natural sugar or artificial sweeteners like xylitol are more expensive and comprise a much larger percentage of the shell ingredients. A ten percent reduction in these yields significant savings. The larger the batch, the more money saved. So if a gum maker was using xylitol priced at $1.50 per pound in the same 400,000 pounds of gum arabic example, and substituted TicaPAN Quick Crunch instead, a one year savings of $1,287,000.00 is possible. The benefits of using TicaPAN Quick Crunch are not just in ingredient savings.

TicaPAN Quick Crunch dries 20% faster than gum arabic, is stronger and whiter in color. Gum arabic is not white, but more of a beige color that has to be changed. The whiteness of TicaPANQuick Crunch eliminates the need for dyes or other processes that add steps and expense and take up more time than when TicaPAN Quick Crunch is used.

Faster drying time means as much as a 20% increase in productivity without the addition of more people or equipment. In a five day week, a 20% increase is like getting six days worth of productivity in the same period.
