Two Farm-to-Table restaurants make TGE's best list.

Buying locally provides many benefits, no matter where you live - besides tasting better, it supports small farms, safeguards biodiversity, cuts out the middleman, and costs less in storage and transport.

The Green Economy singles out two restaurants: Duo Restaurant in Denver, Colorado and Eno Terra in Princeton, New Jersey as restaurants that need to be on your to-do list. Both restaurants have a similar approach to what they offer their customers: gourmet dishes with regional flair based on what the local climate can provide.

“The best approach to the best foods works with the minerals and elements in the soil,” says Chris Albrecht, chef at Eno Terra. “We go to farms and find out exactly what they are doing to create the best products.”

Denver’s Duo Restaurant uses local organic farms, including local dairies, aqua and livestock farms, for its fare. According to Stephanie Bonin, restaurant owner, “[We are] passionate about supporting our local organic farms and purveyors.”
