Food Trade Consultants Announces the Opening of the FTC Kitchen

Food Trade Consultants launches the FTC Kitchen, a new facility where clients can produce and package recipes for sale. This is perfect for start-ups that don’t require mass production of their product.

Food Trade Consultants (FTC), a consulting firm geared towards start-up businesses and entrepreneurs in the food industry, is announcing the recent launch of the FTC Kitchen, a food production and packaging facility in San Juan Capistrano, California (in the same building as the SJC Post Office). Start-ups and entrepreneurs in the food and restaurant industry can have their recipes packaged in small quantities in order to control operating expense and prevent food from expiring before it is sold.

Most co-packing facilities across the country have large minimum runs which can be problematic for a new food company that may not have the sales or financial resources to make several pallets of product. The FTC KITCHEN is the perfect alternative and a place where clients can come and produce a batch of 20 cases or more as they need it. This not only reduces the cost but as Mary Carter, FTC’s founder, recommends to clients, it prevents clients from storing a lot of product that in time may expire.

“I recall a client who ignored my advice,” said Mary Carter, “and went ahead and had hundreds of cases of his chili bottled. He had no place to store the inventory and had very little sales experience. The chili sat in his living room until it expired.” Had this man followed FTC’s advice and started with 20 or 30 cases of chili instead of 300 he may have developed the sales skill he needed and built a nice business. Mary has always started each consultation with a “start small and grow BIG” philosophy, so clients are not overwhelmed and spend any money needlessly or unwisely.

FTC recommends clients take a very conservative approach to building their business, starting small and building on their profits. That is the reason Mary built the FTC KITCHEN, so her clients could have access to a commercial kitchen without the large production runs and obligations required by co-packers.

The FTC KITCHEN contains everything necessary to produce small production runs of dry, wet, hot and cold packed food items. The FTC KITCHEN is more than just a place for commercial food manufacturing though, Mary has found the facility is ideal for a number of purposes. It is good for hosting cooking classes, catering and private cooking parties.

The FTC KITCHEN is also home to the San Juan Salad Club which features large dinner salads made fresh daily using the finest organic ingredients. Each salad is a culinary work of art which members pick up from the FTC KITCHEN between the hours of 4:30pm and 7:00pm on Tuesdays, Wednesdays and Thursdays.

The 3,000 sq. ft. commercial facility now houses Food Trade Consultants’ business offices and was constructed and equipped in the building neighboring their old office in San Juan Capistrano. Mary had been eyeballing the space across the parking lot and when it became available, she jumped at the opportunity.

The build-out began summer of 2012 and was completed and passed inspection this spring.
