Cypress Bayou’s Scott McCue Wins Gold Medal at Fete Rouge Competition

Cypress Bayou Casino Hotel’s Executive Chef, Scott McCue, won the gold medal in the meat category at this past weekend's 2014 Fete Rouge. The annual event is a Louisiana celebration of wine and food and is presented by the Baton Rouge Epicurean Society.

Cypress Bayou Casino Hotel’s Executive Chef, Scott McCue, won the gold medal in the meat category at this past weekend's 2014 Fete Rouge. The annual event is a Louisiana celebration of wine and food and is presented by the Baton Rouge Epicurean Society. McCue’s winning dish was a wild mushroom stuffed beef tenderloin en croute, which is filled with sautéed wild mushrooms and wrapped in seasoned puff pastry served with sauce au poive. McCue’s dish was served with turned baby vegetables and honey rosemary potatoes.

“I love local foods and finding new and interesting ways to present them is always a challenge. To be recognized at this prestigious event was such an honor,” said McCue.

Born and raised in southern Arizona, McCue worked in various upscale restaurants and resorts. He attended culinary classes at the Culinary Institute of America in Hyde Park, New York then moved south to Louisiana in 1995 to open Mr. Lester’s Steakhouse. In 2005, he left Mr. Lester’s to become Executive Sous Chef of Cypress Bayou Casino. In 2011 took over as Executive Chef of Cypress Bayou Casino Hotel, overseeing all eight food outlet kitchens.

Chef McCue is a member of the American Culinary Federation since 1996 and a founding member of the Atchafalaya Basin Chapter of The American Culinary Federation since 1999. Competing in culinary competitions in Louisiana has earned him approximately 115 medals: 47 Gold, 39 Silver and 29 Bronze. He has won best of show in Culinary Classic competitions in Shreveport 2007, Lafayette 2007 and 2013 and in Baton Rouge 2000 and 2009.
