Not long ago, birthday celebrations were straightforward. There was cake – one kind. But the rise of so many food allergies and dietary restrictions has complicated birthday parties, especially those celebrated at schools, where the gatherings hold more kids than a typical weekend get-together in the backyard or a park.

But parties for kids – it goes for adults, too – don’t need to be so fraught. Kim & Jake’s (kimandjakes.com; 641 S. Broadway), Boulder, Colorado’s premier gluten-free bakery, specializes in birthday cakes and cupcakes that taste fantastic without containing one especially problematic ingredient – wheat gluten.

“Many people who try our cakes have no idea they are gluten-free,” said Jake Rosenbarger. “They just taste like cake. Really, really good cake.”

Rosenbarger learned he had celiac disease – and thus could not tolerate wheat gluten – after opening Kim & Jake’s as a traditional bakery in 2010. He had to wear a Hazmat mask to bake with gluten, while he perfected gluten-free recipes in his spare time. This year, the bakery jettisoned all of the old gluten recipes, and became 100 percent gluten-free.
