Pasture Raised, Free Range Chickens Are Laying Eggs at El Pinto Restaurant & Cantina
Albuquerque, New Mexico (PRWEB) November 21, 2015 -- El Pinto Restaurant in Albuquerque, New Mexico is expanding its dining capacity with the addition of one-third acre of land devoted to the scratching and feeding of 150 egg laying hens. The new chicken house and open shaded pasture land are devoted to make for some of the happiest laying hens in Albuquerque. This in turn provides El Pinto customers the most nutritious eggs in the city for making enchiladas, chile rellenos, and Sunday brunch eggs benedict.
“Our grandmother taught us when you have a happy stomach, you have a happy heart,” said Jim Thomas, co-owner of El Pinto. “But for a happy stomach you need nutritious and healthy food. When I see these happy hens and happy customers eating these nutritious eggs, I smile knowing everyone's heart is happy,” explained Jim.
The chicken house is built with environmental consciousness in mind, while being equipped with heating and cooling for the comfort of the chickens. The walls are made with recycled wood bark helping it to blend into the environment. The walls of bark naturally protect the chickens. The pasture for the free range chickens is in a beautiful wooded area, with both ample sun and natural shade. A thin netting keeps the chickens within the expansive space. The hens can retain their full flying ability within this open and welcoming environment. This is unlike most chicken farms where wings and beaks are clipped.
Co-owner John Thomas describes the project, “This is one more step so we can serve the best enchiladas in the nation! We love to source nutritious food locally. Now I can gather a rich omega-3 egg before lunch, and have it fried on top of of my nature grown Hatch red chile enchilada for a healthy, local, and nutritious meal. This is the meal that hooked my father on New Mexican cuisine, and I know he would be proud of this new step we have taken to benefit customers.”
There are only a few hens of laying age currently. Once the full population is laying, there will be 250-300 eggs daily available for customer's meals. Additionally, there are various U.S. Department of Agriculture requirements to serve the eggs within the restaurant environment, which El Pinto is meeting.
Over the 52-year tradition of El Pinto, the restaurant has helped to put New Mexican cuisine on the map. It has prepared green chile based cuisine within the White House presidential kitchen and provided “take-out” direct to Air Force One on the tarmac in Albuquerque. In addition to serving presidents, cabinet secretaries and military generals, local residents continue to independently vote El Pinto Restaurant the "Best New Mexican Restaurant" for multiple years running in the annual Albuquerque The Magazine "Best of the City" readers poll.
