Celiac disease is a chronic autoimmune disease which is the result of an immune system response to the ingestion of gluten (a protein found in wheat, rye and barley) in susceptible individuals, affecting over 3 million people in the United States. For every person diagnosed with celiac disease, approximately 5 out of 6 people have the condition but are undiagnosed. Undiagnosed celiac disease or not adhering to a gluten-free diet can lead to serious health implications such as type 1 diabetes, thyroid disease, heart disease, and potentially some cancers.
