Ahipoki, who made a huge splash in April 2016 by opening the very first poke restaurant in Arizona, have announced their expansion plans to enter the Seattle, Washington restaurant scene this summer.
With seven locations currently operating in California and four in Arizona, the company has slated an additional ten stores to open in California and five more locations in Arizona by the end of 2017. The Shoreline, Washington location is set to open first with Renton following shortly after.
Poke, a Hawaiian based dish featuring diced sushi grade fish like ahi tuna and salmon garnished with vegetables and exotic toppings like daikon and masago served over a bowl of rice is the quick serve industry’s hottest new concept. The Ahipoki Bowl restaurant group, based in southern California is at the forefront of developing the concept and has plans for multi-unit growth throughout the southwest and beyond.
The team of Jason Jantzen and Michael Zimmerman have partnered with Stefanie O’Neal and Lars Gouwerok who have been tapped to develop the state of Washington.
“Although we have seen several poke restaurants pop up in Seattle lately, we’re confident that the Ahipoki concept will thrive. We feel our brand stands apart based on our quality of food, meticulous site selection with a modern restaurant décor and atmosphere,” explained O’Neal.
Zimmerman, entrepreneur and investor, along with Jantzen who is also owner of Phoenix Marketing Associates, have spearheaded the growth of Ahipoki and are looking forward to expanding into other states.

The Ahipoki concept was born out of the desire of a restaurant group wanting to bring a much needed health-conscious California seafood restaurant with a south pacific flair to its customers. Health conscious fish lovers can sit down and relax in a laid back atmosphere all while enjoying the fusion of Japanese and Hawaiian flavors coupled with a fresh fish experience normally found outside of a quick serve restaurant.
