Truss, a new addition to the Portland culinary scene at the Portland Marriott Downtown Waterfront, is one of more than 60 restaurants participating in the third annual culinary celebration that features three-course meals for just $25. The recently opened restaurant’s offerings were carefully crafted by Rising Star Executive Chef Andy Arndt. Arndt left the city’s elegant Aquariva Italian eatery for the opportunity to lead the charge in serving the freshest Pacific Northwest cuisine at Truss.
Arndt has cooked up a seasonal menu for Portland Dining Month that will give foodies a taste of what this Portland waterfront restaurant is all about when it comes to haute cuisine. The first course features a choice of either the homemade soup of the day or a Farmer’s Market Salad served with shaved parmesan cheese and sprinkled with hazelnut vinaigrette. Patrons have a second course choice between asparagus risotto with melting shallots and bacon or pan-roasted scallops with a cauliflower puree alongside fresh radishes and beets. Dessert, the third and final course, includes a Truss sundae or seasonal panna cotta, an Italian gelatin served chilled.
Truss, the name inspired by nearby Hawthorne Bridge, awakens the senses with its modern interior design while leveraging the bounty of the Pacific Ocean for the menu. A stone tile theme carries through the restaurant from other areas of the Portland hotel and flows into the urban 86-seat restaurant. A thoughtful wine bottle installation is incorporated into the décor and Truss’ extensive wine list complements the refined breakfast, lunch and dinner menus which all utilize local ingredients and products from the hotel’s artisan neighbors.
