In the newest blog post to the RecipeIdol.com website titled “Napa Valley Winery Tries a New Approach to Aging and Storing Wine at the Bottom of the Charleston Bay,” Marble Media LLC guest blogger Liz Ernst tells readers about a California winemaker who thinks he may be cooking a new wine recipe at the bottom of the Charlotte Bay. Jim Dyke Jr., president of Mira Winery in the Napa Valley, has decided to test a European experiment that he believes has not been tried by a U.S. winemaker, yet that rapidly ages wine by storing it underwater.
Dyke returned to his hometown of Charleston, South Carolina last week to lower 48 bottles of his winery’s 2009 Cabernet Sauvignon to the bottom of the Charlotte Bay. If the method goes as expected, Dyke says his wine will not only age rapidly, the taste and chemistry will be altered.
Divers secured custom-built permeable and environmentally friendly cages that hold the bottles in place on the sea floor while allowing water to flow around them. There they’ll sit for three months until Dyke and his team retrieve them in May with the help of data-collection devices attached to the cages.
“The underwater method can replicate many of the same factors that are critical in the warehouse aging process like motion, darkness and temperature,” Ernst says. “So, Dyke decided it was worth a try.”
Divers fastened the cages to the ocean floor, and there they’ll stay for three months. Although he realizes that some people might see his experiment as nothing more than a publicity gimmick, Dyke says that marketing ploys and gimmicks are not going to convince people that his wines are quality products.
“Dyke says that the underwater experiment is not a gimmick,” Ernst says. “It’s innovation.”
When divers retrieve the bottles at the end of May, they will conduct chemical tests on each bottle. But for Dyke, it’s the taste that he’s interested in. Until then, Dyke is keeping his expectations in check.
