New Help for People with Food Allergies or Celiac Disease

A new video and snack recipes is now available to help people with food allergies, celiac disease or gluten intolerance from motivational speaker and cookbook author, Lisa A. Lundy, which you can download free from her website.

Buffalo, NY (Vocus/PRWEB ) July 15, 2009 -- For the 12 million Americans living with life-threatening food allergies, the nearly 75 million estimated to suffer from food intolerances or sensitivities and the untold hundreds of thousands using special diets for therapeutic health reasons or celiac disease, eating on the go can be dangerous or difficult to say the least. Motivational speaker and specialty cookbook author, Lisa A. Lundy has released a new short video and a document with free recipes you can download from her website at www.TheSuperAllergyCookbook.com. Lundy's cookbook, "The Super Allergy Girl™ Allergy & Celiac Cookbook -From A Mother Who Knows™", is a gluten-free, casein-free, dairy-free, egg-free, peanut and tree-nut free and other allergen-free resource that is appropriate for both beginners and advanced bakers. Her cookbook has been highly praised by both physicians and consumers.

According to a study by the National Center for Health Statistics, the prevalence of reported food allergies has risen 24% among children under the age of 5 years and 19% among children aged 5-17 years during the past ten years. Celiac disease, a food related disease often confused with food allergies, is now four times more common today than it was 50 years ago say U.S. researchers. Celiac disease is an autoimmune disease in which eating foods containing wheat, barley, rye and other common grains sets off an immune response that can cause damage to the small intestine.

As with many diseases, the early diagnosis of celiac disease provides great health benefits. Unfortunately most people living in America who have celiac disease don't yet know that they have this health condition. Estimated to affect 1% of the population, or nearly 3 million people, 97% of those who have celiac disease are not diagnosed. The treatment for celiac disease is strict adherence to a gluten-free diet. Whereas heart disease, depression, diabetes and other diseases have a relatively concrete and short checklist of symptoms, celiac disease has over 300 signs, symptoms, associated disorders and complications. Some of the common health problems related to celiac disease can include abdominal pain or bloating, acid reflux, anemia, anxiety or depression, arthritis, behavior disorders, autoimmune disorders, chronic fatigue, chronic diarrhea or constipation, headaches or migraine, heart disease, infertility or miscarriage, irritable bowel, insomnia and malnutrition.

Untreated celiac disease increases the risk of cancer 200 to 300%, increases the risk of miscarriage by 800-900%, and carries with it additional health concerns like neurological disorders, osteopenia or osteoporosis that can be avoided by early diagnosis. Celiac disease is diagnosed by a celiac panel blood test followed by a small bowel biopsy. According to U.S. experts, a person with symptoms of celiac disease takes on average 10 years to get diagnosed. The Celiac Sprue Association USA, Inc. and the Gluten Intolerance Group of North America, are just two of the national consumer organizations dedicated to helping people with celiac disease and gluten intolerance.

Lundy's second child has celiac disease, which she suspected during his first year of life. She had a difficult time getting answers to her medical questions and a hard time feeding her son who is now ten years old. She is passionate about helping people understand how they can use changes in their diet to resolve a wide variety of health issues and about getting the nearly 3 million Americans diagnosed with celiac disease. Her book is available at www.TheSuperAllergyCookbook.com
