The Toronto Airport Marriott is pleased to welcome world-class Executive Chef James Piggott to Bistro West by East at the Toronto Airport hotel. Chef Piggott is passionate about the culinary arts and has refined his skills at various hotels across the Greater Toronto Area.

James participates in worldwide culinary competitions and has proudly represented the province of Ontario as a member of the 2000, 2004 and 2008 Culinary Team Ontario. In 2008, the Culinary Team Ontario won multiple gold and silver medals at the World Olympics in Germany. With his passion to develop others, Chef Piggott has been a member of the culinary faculty at both Humber College and George Brown College, where he has taught on a part-time basis. He believes one of his most important roles is to nurture and train young apprentices and cooks.

Dinner choices include an interesting twist on a classic - deep fried mac & cheese - or oven roasted Canadian angus prime rib, butternut squash agnoloti, and apple cider grilled Ontario pork tenderloin.

Share plates options include Ontario Mennonite spring rolls, sweet potato poutine, chilled lemon grass poached shrimp and Canadian peameal sliders.
