The Toronto Airport Marriott is pleased to welcome world-class Executive Chef James Piggott to Bistro West by East at the Toronto Airport hotel. Chef Piggott is passionate about the culinary arts and has refined his skills at various hotels across the Greater Toronto Area.
James participates in worldwide culinary competitions and has proudly represented the province of Ontario as a member of the 2000, 2004 and 2008 Culinary Team Ontario. In 2008, the Culinary Team Ontario won multiple gold and silver medals at the World Olympics in Germany. With his passion to develop others, Chef Piggott has been a member of the culinary faculty at both Humber College and George Brown College, where he has taught on a part-time basis. He believes one of his most important roles is to nurture and train young apprentices and cooks.
Chef Piggott and his culinary team are committed to giving guests an exceptional dining experience, from an intimate corporate meeting to an extravagant gala event or wedding. “Bistro West by East offers classic Canadian comfort food with a twist,” says Chef Piggott. “We source fresh, local ingredients and design simple dishes that allow the flavours to speak for themselves.”
With the arrival of Chef Piggott, Bistro West by East has just launched new winter menus for lunch and dinner. Bistro West by East’s Canadian-inspired dishes play tribute to the cultural, regional and geographic diversity of this great nation. For lunch, diners can start with maple roasted Ontario squash bisque and enjoy sumptuous entrees including brie and Saskatoon berry stuffed breast of chicken, Nova Scotia lobster fettuccini, pan seared organic salmon or a variety of delicious sandwiches and pizzas. Dinner choices include an interesting twist on a classic - deep fried mac & cheese - or oven roasted Canadian angus prime rib, butternut squash agnoloti, and apple cider grilled Ontario pork tenderloin.
For diners looking for a signature cocktail or quick bite to eat, Bistro West by East Lounge offers a more casual menu. Share plates options include Ontario Mennonite spring rolls, sweet potato poutine, chilled lemon grass poached shrimp and Canadian peameal sliders.
