Whizard® Series II Trimmers Ideal for Maximizing Lean Meat Yields

Bettcher Industries' Whizard® Series II Trimmers offer this new application for beef and pork neck bones.

Birmingham, OH (Vocus/PRWEB ) April 28, 2008 -- Whizard® Series II Trimmers from Bettcher Industries represent the safest, most effective way to increase lean meat yields from beef and pork neck bones. The Whizard® Model 620 Trimmer is particularly designed to harvest lean meat from neck bones – while at the same time eliminating the risk of bone fragments, spinal cord or spinal fluid contamination.

The trimmers also deliver distinct benefits over the risk of contamination associated with product gathered by automated meat recovery (AMR) systems.

The value of this application is very compelling – significantly improving the recovery of high-value lean meat compared to using a straight knife. For example, when trimming pork neck bones, approximately 2.5 oz. of meat per hog is typically harvested when using a straight knife. In contrast, using the Whizard® Model 620 trimmer increases the yield to approximately 7.5 oz. per hog. Significant yield improvements using the Whizard® trimmer are also experienced when trimming beef neck bones.

The Whizard® Series II is the latest generation of trimmers which were pioneered by Bettcher Industries. The Model 620 features a two-inch diameter blade, sized to trim narrow areas easily while optimizing quality meat yields. Moreover, the two-inch blade size enables processors to conform to the restrictive cutting blade standards as set by large quick-serve restaurant chain operations.

In addition, the Whizard® Series II trimmer incorporates new, patented design elements to enhance operator productivity, safety and comfort. For example, each handpiece features a contoured handle to reduce grip force and torque momentum. Operators can choose from five interchangeable handle sizes as well as left- and/or right-handed operation. The handles are color-coded by size for identification, and are very comfortable – even during periods of extended use. A hand-strap provides operators with added control if desired, while the flex-shaft/casing attaches to the handpiece with a simple two-action motion.
