Baltimore Marriott and Renaissance Hotels Launch Summer Crab Celebration Promotion

To celebrate their love of all things crab and Baltimore dining, the Baltimore Marriott and Renaissance hotels have launched a "Summer Crab Celebration" promotion at their on-site restaurants.

During the month of August, each guest dining at these Baltimore restaurants will receive a special coupon for a complimentary crab appetizer on a future date (coupon is good through October 30, 2011).

Each of the participating restaurants in Baltimore will be highlighting crab specialties on their menu as noted below.

•     Harborplace Crab Chowder - a Baltimore classic served in an artisan bread bowl
•     Chesapeake Crab Cocktail - jumbo lump crab meat, cocktail sauce, grilled lemon

In honor of this promotion, the Baltimore Marriott Waterfront is also sharing one of its favorite recipes:

Blue Crab and Roasted Corn Chowder

2 shallots minced
2 garlic cloves minced
1 tsp chopped fresh parsley
2 tbsp butter
2 medium carrots peeled and diced
1 large onion diced
4 ribs celery diced
2 potatoes peeled and diced
3 tbsp flour
2 cups roasted corn (to roast, toss corn in small amount of olive oil in oven on 375 for approximately 15 minutes till slightly browned)
5 cups crab (preferred), fish, or chicken stock (bouillon will work fine)
2 tsp Old Bay Seasoning
1 tbsp Worstershire sauce
1 1/2 cups whipping cream
6 oz. lump or jumbo lump crabmeat, pick shells from meat
salt and pepper to taste

In large soup/sauce pan melt the butter and saute the shallots and garlic for a few minutes over low to medium heat. Add the carrot, celery, onion, potatoes and continue to cook for 5 minutes. Add the corn. Stir in the flour until it's mixed in. Add stock slowly while constantly whisking. Bring to a boil, then simmer for approximately 10 minutes stirring frequently. Add the cream, Worstershire, Old Bay seasoning, crab meat, and parsley. Bring to a boil. Add salt and pepper to taste. Enjoy with warm bread or rolls.
