Luxury Hotel Park Hyatt Chicago’s Seventh Floor Evolution includes NoMI Kitchen, NoMI Lounge, NoMI Garden, and NoMI Spa

The downtown Chicago restaurant, re-opening in June, moves from fine to accessible dining, feature simple, local and creative cuisine, a new open kitchen, terrace, and artisanal cheese cave.

NoMI, the Chicago luxury hotel’s flagship restaurant, will reopen on June 3 under the NoMI lifestyle brand with four elements of Park Hyatt Chicago’s seventh floor: NoMI Kitchen, NoMI Lounge, NoMI Garden, and NoMI Spa.

The downtown Chicago restaurant, NoMI Kitchen, will be the centerpiece of Park Hyatt Chicago’s seventh floor renovation, which will include an extraordinary redesign of the kitchen, lounge, private dining spaces, garden; and new NoMI Spa concept. NoMI Kitchen is based on the idea that the center of the home is the kitchen, where family and friends gather; an everyday occasion place. The unique design presents the kitchen as the focal point and showcasing the culinary team and featuring a prominent Molteni stove. A new artisanal cheese cave with the finest imported cheese will be located in the downtown Chicago restaurant’s Wine Cellar. NoMI Garden will add a new backdrop to the outdoor terrace with a 30 ft. natural teak wood bar with black granite countertop.

The dining room will offer a comfortable and approachable atmosphere. Rich, wooden tables accented with leather will replace the more formal white tablecloths. Contemporary tones with dark browns, creams and pops of color will infuse the space with warmth and complement the restored details of the original mosaic tile floors. The renowned Dale Chihuly handblown glass sculptures will be repositioned in the private dining rooms. The artistic “Wintry Branches” will adorn the space located above the dining rooms coveted window tables and specially commissioned photographs will enhance the interior and overall experience.

Executive Chef Ryan LaRoche, Chicago native, former Executive Sous Chef of L’Atelier de Joël Robuchon Las Vegas, and CIA graduate, will oversee NoMI Kitchen. Chef Ryan LaRoche’s flavours are inspired by the seasons, regionally sourced ingredients sprinkled with influences from his roots. The impeccable service provided by the sincere and approachable staff will guide guests through a distinctive experience from three main venues offering guests a diverse choice from which to celebrate everyday occasions.

Chef LaRoche’s menu will remain rooted in the high-quality ingredient driven and flavorful dishes he has become known for while celebrating the farmers, ranchers, cheese makers and artisans of the surrounding regions. Highlighted on the menu as “Our Partners,” the farmers and artisans will now share the stage with the culinary team. The menu will place an emphasis on the freshest ingredients and finest flavors, simple, creative dishes, and a la carte offerings. New offerings will include an expanded “Ocean Bar” featuring a larger selection of oysters and shellfish as well as new crudo and ceviches in addition to the signature NoMI sushi. A “Simply Prepared” category offers Market Fish, Maine Lobster, Yorkshire Pork Porterhouse, Prime New York Strip, Rack of Lamb paired with a variety of seasonal side dishes like Foraged Mushrooms, Handmade Tagliatelle, House Cut Kenebec Frites, among others. The new “To Share” section offers items for the table such as Poached TJ’s Farm Chicken, farm raised from Pennsylvania and Roasted Bone-in Dry Aged Prime Ribeye served family style for three or more people to share.

The extensive wine list at the downtown Chicago restaurant features a selection of more than 500 labels of wines, including up to 20 wines by the glass.

NoMI Kitchen accommodates seating for 125, including Chef’s Table, and additional seating in the private dining space.
