In a year-long education effort about the role of diet in helping to prevent cancer, Executive Chef Charles Phillips of Nashville's award winning 1808 Grille (http://www.1808grille.com) has partnered with the National Foundation for Cancer Research to promote healthy eating habits that aid in cancer prevention.

As Executive Chef, "Chef Charles" is committed to healthy living and presents that daily at 1808 Grille by offering a gourmet twist on the fresh, sustainable and locally grown products offered on the menu. 1808 Grille is located in the Hutton Hotel at 1808 West End Avenue, Nashville, and in just over a year since opening, has won numerous awards for culinary excellence and innovation.

During the course of the year, Phillips will provide expert tips, healthy recipes, and options on how to prepare fresh and organic foods. These will appear on the NFCR website each month, at http://www.nfcr.org/recipes, and will encourage visitors to make the choice to eat well - but eat "fun!" - as one means of helping prevent cancer.

"As we continue the trek to cure cancer through research, having Chef Charles on board is going to be a great asset in our campaign for healthy eating, making it easier for people to get on track to a healthy lifestyle and lower their risk of getting cancer," said Franklin C. Salisbury, Jr., President of NFCR.

The NFCR recommends eating at least five servings of fruits and vegetables per day, along with good sources of fiber, such as whole grains. Eating well can help prevent obesity and other health problems that can all be linked to cancer. With Phillips' help, achieving these guidelines can be easy and even delicious.

The National Foundation for Cancer Research supports cutting-edge research that includes exploration into ways that diet and cancer are related. In fact, NFCR's research shows that more than 30% of human cancers are thought to be related to dietary factors. Some foods are related to cancer causation, while others help prevent it.
