In 1996 Crabcake Factory USA in Ocean City, Maryland opened its doors. Things were a lot different then however and owner Johnny Brooks recalls the early days when he was the only kitchen employee and they only prepped up a few crabcakes at a time.

"I used to take two pounds of jumbo lump crab meat and make eight crabcakes at time back then," explains Brooks, who is the sole owner of the Ocean City, Maryland restaurant and website operation.

Brooks now employs over 80 workers and on the recent "Black Friday" kick-off to the holiday season he sold over 2000 of his famous crabcakes in 12 hours.

"We've been doing this longer than anyone else and people come back year after year," says Brooks. "It's a pretty simple recipe and we don't add any fillers or bi-products like the big food shopping networks."

These crabcakes are so popular that he was recently approached to sell them on TV with one of the biggest shopping websites in the world. Brooks refused however, claiming they wanted him to add breading and fillers to improve the bottom line.

"That just wouldn't be my crabcakes," he quips. "There's only one place in the country to get them, that's why they are so unique."

People are amazed at the amount of crabcakes produced out of this unassuming little shack on the Eastern Shore of Maryland. Ocean City is a resort town so its very busy in the summer but not a lot is happening in the winter. While most businesses close for the season after Labor Day, Brooks and his staff are heading full steam into the hectic holiday season.

"I think people want to give gifts that are not just cookie cutter and unthoughtful," says the lifelong Maryland resident. "I guarantee you if you send someone a six pack of our jumbo lump crabcakes or even some crab stuffed lobster tails they will at the very least remember it and most likely they will be gushing with joy."

Crabcake Factory USA restaurant and retail store is open year round on 120th street and the Beach, in Ocean City, Maryland. Crabcake Factory USA is not a franchise but they are looking into this at present.

"I have been approached a hundred times about franchising but until I find the right person to run the show I am not ready," says Brooks. "I have spent 20 years perfecting this crabcake recipe and I am very picky about where and when I will open another location. Bigger is not always better. I'm in no hurry to let the proverbial cat out of the bag." (Perhaps he meant "let the "Crab" out of the bag, huh?")
