Spring onions are commonly confused with scallions, but are not the same thing: they are simply regular onions that are harvested earlier. Scallions have a narrow white bulb that shoots straight up into a green stalk, whereas spring onions have a rounded bulb that may be red, white or yellow, depending on the variety. Spring onions can be used in recipes calling for scallions, but not the other way around, because scallions’ bulbs are not as meaty.
