Chef Vincent Carvalho Joins Shane Die & Fitness Resort

Shane Diet & Fitness Resorts proudly announces that internationally known Chef Vincent Carvalho will bring his culinary expertise to Shane Diet's latest weight loss program at The Westin La Cantera Hill Country Resort in San Antonio, Texas.

Carvalho, who will work closely with Shane Diet's staff dietitians, will create menus and dishes for and offer cooking classes to guests taking advantage of Shane Diet's exclusive program based on the Four Cornerstones: The Shane Experience, Fitness, Behavior Change and Nutrition which help guests lose weight and keep it off.

Carvalho first gained his interest in the culinary arts at the knee of his uncle who owned a famous restaurant in Carvalho's native Biarritz, French in the majestic Pyrenees Mountains. The cross-cultural cuisine, drawing from the best of both France and Spain, introduced the young chef to the flavors of those rich regions, bordered by the ocean.

Fabulous seafood, bountiful produce and a mixture of flavors inspired by the fiery Basque culture taught Carvalho to appreciate the bounty of his surroundings, the organic, multicultural flavors of the food, and the festive feeling every meal evoked.

"My favorite cuisine is based on 'Pinxos' (called 'Tapas' in Spain) with each small dish containing the very best of ingredients and flavors," says Carvalho. "Meals were occasions in my family and my country and I still look to make each dish I create memorable."

Besides the education gained in his uncle’s kitchen, Carvalho also served an apprenticeship in the kitchen of Hotel du Palais, one of The Leading Hotels Of The World, before he pursued another interest of his and became a professional Jai-Alai player for nearly two decades. His sporting tours brought him to the United States and, when his athletic career was done, Carvalho turned again to his first love--cooking.

He remastered the menus at French and Spanish restaurants in trendy South Florida before becoming chef at Le Meridien Hotel at Sunny Isles Beach and then the Sheraton and Westin Fort Lauderdale Beach hotels.

It was in Florida that Carvalho was able to indulge another of his passions--teaching children about good nutrition. He brought his expertise to bear on the cafeterias of schools in South Florida, introducing healthier items and even instituted a popular self-serve salad bar (in place of fast food items) for younger students.

"I am a father myself and I was very concerned about the types of food my own children were being served at school. Dishes were full of fat and salt and empty calories and I knew I could do better. So when I got the chance to teach the kids, and, even better, to show them that healthy food choices can taste good, I was delighted to do so."

Carvalho is thrilled to bring his experience to Shane Diet & Fitness Resorts' menu and looks forward to working closely with the program's dietitians to create dishes that taste great, are truly satisfying and help guests stick to their weight loss plans.
