"Rhonda’s Culinary Creations" is a new recipe-book-and-more inspired by the Bible. Featuring more than 400 vegan-based recipes, this collection of healthy snacks, salads, entrees, and desserts also includes vegan menus and entertaining ideas that can make 2013 a year of healthy eating. Each recipe is made with fresh, organic, all-natural ingredients, most of which can be found in any grocery store or hometown farmers market.
The journey to this collection of recipes began more than 30 years ago on a rainy night in 1981, when Rhonda Malkmus and a friend were driving on a rural road in Iowa. Her car stalled on railroad tracks in front of an oncoming train. The impact threw the car into the air but Malkmus and her friend were miraculously alive and free of serious injuries. However, in the months and years that followed, Malkmus discovered what a collision with a train would do to a body. Chronic pain, including debilitating arthritis, became her constant companion.
After moving to a milder climate in Tennessee, Rhonda met and married Rev George Malkmus, a Baptist preacher who advocated a plant-based diet. After adopting this mostly raw, plant-based diet, her health improved dramatically; and today, she has no joint pain, is able to exercise regularly, and shares her dramatic recovery through diet change in vegan food workshops, lectures and seminars. Over the last two decades, both Rhonda and George have promoted The Hallelujah Diet — a diet and lifestyle for transforming health — through their company, Hallelujah Acres.
Mrs. Malkmus says that she was led by the Holy Spirit to write her recipe books - though not always willingly. “In 1992, when George and I met, there were virtually no raw recipe books available. The Lord laid it on my heart to write my first book, and we argued about it for 2 years,” she says with a smile.
"Rhonda’s Culinary Creations" is the fourth in a series of vegan recipe books written by Malkmus. All take their inspiration from Genesis 1:29: “I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food.”
The book includes vegan recipes for nutritious meals and satisfying snacks. “There are basic recipes for everyday favorites such as soups, stews, breads, sandwiches and salads,” explains Rhonda. “But I’ve also included more advanced entrée dishes that are tasty enough and beautiful enough to serve at holiday time.” Tips to make preparation easy are also included, along with culinary how-to’s and suggestions.
Ring in the New Year with a Healthy Brunch Recipe
“Hallelujah Brunch”- one of the many bonus menus included in "Rhonda’s Culinary Creations" - is a good fit for New Year’s resolutions and easy to expand or reduce for a large or small family gathering. The festive menu features a feast of raw granola, raw veggie wraps, garden stuffed pitas, and carob snacks for dessert. The author recommends herbal tea instead of caffeinated drinks and sets up a smoothies bar with a nutritious breakfast smoothie as the centerpiece.
“I encourage people to serve a Hallelujah Brunch as the new year begins so that they can start 2013 off right in terms of health and wellness,” says Mrs. Malkmus. “The recipes are so simple that anyone can easily master them."
The Book She Had to Write
"Rhonda’s Culinary Creations" is a compilation of all the recipes the author/lecturer has taught in her culinary classes at Hallelujah Acres over the years. “We wish everyone could be part of the Hallelujah Acres experience in person, but we know they can’t,” Mrs. Malkmus shares. “That’s one of the reason I created my new book and a companion DVD of my three-hour food prep class that was taped in front of a live studio audience.”
How to Eat Away Disease
“The foods in God’s original diet provide the human body with all the nourishment it needs to thrive,” said Malkmus. “The standard diet most Americans consume with its inclusion of refined flour, refined sugar, dairy, meat, and other foods has been proven to promote disease.”
The American Dietetic Association’s findings support Mrs. Malkmus’ statements. The ADA states that vegetarians are at lower risk for developing heart disease, various forms of cancer, obesity, diabetes, and high blood pressure.
Unlike the standard American diet approach to eating, The Hallelujah Diet consists of 85% raw, plant-based foods and 15% cooked, plant-based foods. “This is the diet that God intended for mankind to have,” says Mrs. Malkmus. “It was designed to nourish the body and spirit and give us a long lifetime of optimal health.”
Recipes with Americans Changing Tastes in Mind
Mrs. Malkmus’ ingredients may be derived from ancient Scripture, but "Rhonda’s Culinary Creations" is clearly intended for contemporary life. “Many of the recipes are very easy,” Mrs. Malkmus emphasizes. “They can be prepared quickly so that you can spend more time at the table and less time preparing what goes on the table.” It is also perfectly in sync with the growing number of consumers who are adopting a vegan lifestyle.
According to a Harris Interactive Poll commissioned by the Vegetarian Resource Group, four percent of Americans identify themselves as vegetarian or vegan, never eating meat, poultry, or fish. Forty-seven percent of U.S. citizens eat at least one vegetarian meal each week.
