Taking the world population of 6.8 billion people and dividing it by the average 2.5 people per family, gives Santa about 2.7 billion households to visit across the globe in one night.

Now assuming that every household will leave two chocolate chip cookies for Santa, they multiplied the nutrition facts of an average cookie by the number of households, returning some "inflated" numbers.
