Olde Ipswich Tours is no stranger to partnerships. As an American small group tours operator in business for 18 years, the company has seen partnerships as a boon to business for everyone involved. “We have partnered on culinary tours with Chez Boucher's cooking school for years,” says Jean Moss, Olde Ipswich Tours owner. “Every year we do a fabulous European food-and-wine tour for Chef Ron Boucher and a group of friends and customers. Ron tells us where he wants to go, and we plan the itinerary. We alternate between a region in France one year and in Italy the next, going to Michelin-star restaurants, visiting local vineyards, and sightseeing in between all the eating and drinking.”
Boucher and Moss just returned from this year’s culinary tour, a 10-day jaunt to Normandy, which included a four-day riverboat ride on the Seine River, ending in Paris. Instead of vineyards, this tour included visits to a dairy farm in Livarot for a cheese-making lesson and an apple orchard to learn about cider and Calvados distilling.
Dennis Sherman, owner of Elden Selections of Burgundy, France, joined Olde Ipswich Tours and Chez Boucher at the lovely Victoria Inn in Hampton, N.H., last week, to showcase a selection of Burgundian wines. Elden Selections is in the business of delivering small-production estate-bottled Burgundy wines to your door in the U.S. A few of the wines that Sherman featured last night were: 2010 Capitain-Gagnerot Ladoix 1er Cru “Les Grechons”; 2010 Jean Fery, Savigny-les Beaune 1er Cru “Les Vergelesses”; 2010 Jean Jacques Girard; and 2009 Jean Fery Pernand-Vergelesses 1er Cru “Les Vergelesses.”
Boucher paired these wines with a selection of hors d’oeuvres, prepared at the inn by students in his cooking school. The creations included House Cured Salmon with Boursin Cheese and Capers; Chevre Cheese Croustarde with Black Cherry Confit; Espresso Rubbed Pork Tenderloin with Peach Chutney; and Escargots aux Champignons Wrapped in Puff Pastry; to name a few.
Olde Ipswich Tours and Chez Boucher are planning more events at the Victoria Inn, where guests can spend the night in one of the beautifully appointed bedrooms. Next year's culinary tour will be to the Amalfi Coast, Italy, in April. Moss says her two-week tour to Burgundy and Provence next year will definitely include a visit with Dennis Sherman.
