This time of year, Madrona Manor, one of the most celebrated hotels in Napa Valley or Sonoma, is reaping the benefits of their on-site fruit and vegetable garden. The harvest has been later than normal, and tomatoes are just now becoming abundant in the garden. Chef Jesse Mallgren says the Sonoma hotel’s estate tomatoes show up on about a third of the restaurant’s menu during tomato season, and offers one of his favorite tomato recipes.
“There is a cornucopia of juicy tomatoes in the garden right now,” says Master Gardener Geno Ceccato, who has lovingly tended the gardens of the Sonoma inn for the past 23 years. “We invite guests to share in our bounty.”
The Sonoma hotel’s eight-acre estate gardens are overflowing with 200 tomato plants in 20 varieties, including Mr. Underwood's Pink German Giant, Erica D'Australie, Yellow Red Cap, Kentucky Orange, Beefsteak, Virginia Sweets, Magnum, Brandy, Liam's, Chapman Hugh's, Ananas Noir, Carbon, Pineapple Tomato, Aussie Black Cherry, Mammoth German Gold, Amana Orange, Black Brandywine, Sugar Lump, Sungold Hybrid, and Yellow Plum.
One of the most popular dishes at Madrona Manor’s restaurant these days is the Simple Garden Tomato Soup, a delicious and easy-to-prepare take on a classic late summer favorite. Chef Jesse shares the recipe, which serves 4, below:
Sweat onions and garlic in the olive oil on low heat until both are soft (about 20 minutes), making sure they do not burn. Add tomatoes and continue cooking for another twenty minutes or until all of the large chunks of tomato are soft. Turn off heat and add basil to the pot, let sit for 30 minutes. Pass soup through a fine mesh food mill; next strain through a fine mesh strainer. Season to taste. Heat and serve with your favorite bread.
“Tomato soup is one of those rare healthy comfort foods,” says Chef Mallgren. “I keep it simple to really let the flavorful heirloom tomatoes be the star of the show.”
