Tokyo Express, a sushi restaurant with four locations in San Francisco, is celebrating 15 years of sushi made from the highest grade of fish that restaurants can buy.

Tokyo Express goes further than your average sushi bar by offering only fish with a Grade-A Certification from the United States Department of Commerce (USDC). The USDC Grade-A certification is given by the National Oceanic and Atmospheric Administration (NOAA) Seafood Inspection Program, which offers a variety of professional inspection services, such as sanitation inspection; laboratory analyses; and system and process auditing in facilities, on vessels, or other processing establishments. The voluntary program goes beyond the basic Food & Drug Administration (FDA) regulation and ensures safety, wholesomeness, economic integrity, and quality.

“Our mission is to ensure the safety and quality as well as enhance the marketability and sustainability of seafood products for the benefit of the American consumer by providing science based inspection services to the seafood industry,” states the NOAA Seafood Inspection Program.

The USDC Seafood Inspection program only stamps “Grade-A” on fish after inspecting the sanitation of the vessels and processing facility, auditing the system, inspection of the product, and lab analysis. Fishing vessels and processing facilities that voluntarily sign up for the program are held to a much stricter level of cleanliness and hazard management than required by federal law.

In addition, the USDC Grade-A fish served at Tokyo Express are caught by individual handline and are killed using the “Ike Jime” method, where fish are paralyzed and bled with the quick insertion of a spike directly into the hind brain that causes immediate brain death. The technique, which originated in Japan, causes blood contained in the fish flesh to retract to the gut cavity, producing a better colored and flavored fillet. It is a faster and more humane method of killing fish than gutting, and results in tastier fish.
