Romance will be in the air at the award-winning restaurant Salt, at The Ritz-Carlton, Amelia Island. What is Chef de Cuisine Rick Laughlin’s vision for a Valentine’s menu? “This is a menu that uses all five senses. There’s the taste and texture of each course with tantalizing aromas combined with colorful presentations and the sizzle of food cooking on salt platters.”
The four-course, pre-fixe menu begins with an Alaskan king crab creation which is followed by a mouthwatering Serrano wrapped monkfish with porcini ravioli. The third course is the Chef’s signature entrée consisting of beef tenderloin, poached lobster, black truffle and quail egg cooked on a Himalayan salt platter heated to 350°F. “The lobster is poached in a parmesan cheese sauce and extremely rare black truffle which seems appropriate for a Valentine’s celebration,” adds the Chef.
For dessert, chocolate fondue with passion fruit and house-made marshmallows that melt in your mouth. The fondue is served in a Himalayan salt bowl that retains heat for up to three hours. The salt slab used for the entrée and the dessert salt bowls are mined from deep in the Himalayan Mountains. Himalayan salt is the healthiest salt in the world because it is served in its purest form and retains its minerals and vitamins.
The Valentine’s Menu is offered Saturday, Sunday and Monday, February 12, 13, and 14. The price for the Valentine’s Menu is $120 per person or $160 per person with wine pairing. An ala carte menu is also served. For reservations, call (904) 277-1100.
