Ian Powell, Managing Director of the Inn at Laurel Point in Victoria, BC has added a few pounds lately, perhaps spending too much time in the fine dining kitchen at Aura sharing stories with his new executive chef and old friend, Takashi Ito.
“I am in love with Victoria. The ingredients and culinary talent available to us in British Columbia are amazing,“ says Ito. “To be able to stay where I can indulge in my love of BC wine and local ingredients in a spectacular harbour setting is a dream come true.”
From the Inn at Laurel Point’s perspective, it is also a match made in BC culinary heaven. They have hired a seasoned pro needed to maintain, and expand, Aura’s spot as the culinary waterfront hotel destination on Southern Vancouver Island.
Along with overseeing the kitchen for Aura’s Victoria waterfront restaurant and outdoor patio, Ito is also responsible for room service, especially popular at the hotel due to its gorgeous suites with spectacular harbour views and huge outdoor balconies. Victoria meetings held at the Inn at Laurel Point also benefit from Chef Ito’s menus.
And while Ito inspired dishes are making their way to AURA’s fine dining menu, including an increase in vegetarian and vegan options, Chef Ito is planning to launch his new menu the end of May in time for the busy summer and Victoria, BC harbour view patio season.
