I started my company when I learned that sauce out of a bottle could not mimic the smoky flavor that permeated the chicken I would buy at tin shack stands and road side barrels in Jamaica – the cooking style had to involve native Pimento wood and spices.

Gary Feblowitz, Founder of Exotic Wood Chips, LLC. (http://www.PimentoWood.com), today announced that his company has achieved the status of the only approved US importer of Jamaica sourced Pimento Wood, leaves and charcoal. This achievement took Feblowitz seven years to achieve because of all the regulations both in the United States and in Jamaica.
“Jamaica is very protective of Pimento Wood,” explains Feblowitz. “Back in the early 1900s, the entire population was nearly lost to overharvesting by umbrella manufacturers, who used the trees’ dense wood for umbrella handles. Today, the Jamaican government treats the Pimento tree, also known as the Jamaican Allspice tree, as a national treasure, consequently monitoring exports very closely. “We succeeded where others failed because we harvest the full tree, and only select trees that are past their fruiting stage or are storm damaged. Most importantly, we ensure sustainability by planting three trees for each one we take. Much of our profits go back to the Pimento tree farmers.”
Though Jerk seasoning sits along the shelf of most grocery stores, it is the smoke and cooking technique that gives Jerk seasoned meats its unique flavor. Exotic Wood Chips & Pimentowood.com sells all elements necessary to execute Jerk flavoring replicated from its Jamaican genesis. These elements include Pimento wood chips, Pimento wood lump charcoal, Pimento wood grilling planks and sticks, Pimento leaves, Pimento spice (Jamaican Allspice) and a variety of Jerk sauces.
Feblowitz added, “As a professional photographer for TV shows ranging from Discovery, Travel and Food Networks, I became obsessed with the taste of Jamaican jerk. I started my company when I learned that sauce out of a bottle could not mimic the smoky flavor that permeated the chicken I would buy at tin shack stands and road side barrels in Jamaica – the cooking style had to involve native Pimento wood and spices. The key to the juicy and succulent flavor is the slow indirect cooking, away from the direct heat of the specialty charcoal. Once I mastered that technique, I knew I could enjoy authentic Jerk chicken at the comfort and convenience of my home grill in Minnesota.”
Tim McKee, James Beard Award winning Chef, was astounded when he first met Feblowitz. "I can't believe I found pimento wood in the US, then I learned the sole importer is in my back yard - Minnetonka! Are you kidding? What are the chances?" Three months later, he opened Smalley's Caribbean BBQ in Stillwater, Minn, the first restaurant in the US to use pimento wood smoke.
