There are two types of methods for making olive oil, the traditional (or pressure) method and the modern method, which is also known as the centrifugation method. The traditional method is no longer used due to its inability to meet safety standards. The traditional method involved using a large cylindrical stone that would crush the olives.
The centrifugation method came along in the 70’s and involves adding olive paste to a centrifuge, which then separates the olive oil from water and pomace.
In the modern and traditional methods of producing olive oil, many aspects are different. When it comes to finishing the separate of olive oil and pomace, there are a few differences. When using the pressure method, the oil is naturally separated from water by natural settling. This process is lengthy and does not ensure complete separation. It also does not seal and contain the olive juice. When exposed to air, oxidation and fermentation occurs.
Using a centrifuge or a decanter ensures complete separation. In the centrifugation method, vegetal water is removed in suspension and directed to a different separator. This helps in recovering traces of oil. The centrifugation method is better at separating olive oil from the olives and preventing the oxidation process from occurring. A large quantity of water in the oil can speed up the oxidation process and negatively affect the quality of the oil.
