Callebaut spent seven years in research to identify and unlock the favorable ferments of nature to deliver chocolate artisans the purest cocoa available anywhere.

This process, called the Q fermentation method, is unlike any other beginning with the best cocoa pods, handpicked and hand-opened to remove the beans intact. Next, natural ferments are mixed with the cocoa beans, which are then gently wrapped in banana leaves for the fermentation process. The beans are removed one to two days later and placed on bamboo mats to dry. The result is nearly zero defect beans and cocoa of the finest purity that is unlike any seen or tasted.
