Harry McWatters is the founder of Sumac Ridge and See Ya Later Ranch as well as the founding chair of BC Wine Institute and VQA Canada. 3. Little Fish, Big Flavor - cooking with sustainable seafood

National Geographic Fellow, author and professional chef, Barton Seaver, joins The Fairmont Chateau Whistler’s culinary team for a sustainable seafood demonstration featuring sardines, anchovies and herring. As an executive chef, Seaver opened seven restaurants in the United States and gained critical acclaim for his environmentally friendly menus. He was named Esquire magazine’s Chef of the Year for 2009 and has published two books: For Cod & Country in 2011, and Where There’s Smoke in 2013. Tickets $46.00
