The European Union campaign Flavor Your Life shares how to make a traditional Italian onion soup with Tuscan olive oil.

Flavor Your Life, a European Union funded campaign dedicated to providing the latest in olive oil industry news, shares a delicious recipe for Tuscan Cipollata using extra virgin olive oil from Tuscany.

Cipollata is a traditional Tuscan onion soup. For this recipe you will need 28 oz onions, 1 carrot chopped, 1 celery stalk chopped, 1 lb. pork ribs, 1/8 lb. bacon, 1/8 lb. sausage, 2 tablespoons of Tuscan olive oil, 8 slices of stale bread, and salt, pepper and garlic to taste.

Start preparing this dish by placing 6 ½ cups of water in a large skillet and adding the carrot, celery and pork ribs. Bring to a boil and let the pork ribs cook until the meat can fall off the bone. While the meat is cooking, slide the onions and soak in water. Heat up a pan with Tuscan olive oil and fry the bacon and sausage. Add two ladles of pork stock to the mixture of olive oil, bacon and sausage. Remove pork meat from the bone and add to the soup along with onions, and remaining broth. Serve over the bread slices in soup bowls.

Carol Firenze, author of The Passionate Olive, details why you use certain olives oils from different regions to complement specific dishes. “You can create harmonious flavors by pairing Extra Virgin olive oil with food,” she says. “Use a mild intensity olive oil for dishes that require a subtle flavor, like fish, pesto, eggs or when baking. Use a medium intensity olive oil for dishes that call for fruity flavor enhancements, such as salads, grilled chicken, and vegetables. Use an intense olive oil for dishes that call for bold flavor, like pasta sauces, soups and grilled meats.”

Flavor Your Life, a campaign supported by the European Union, Unaprol and the Italian Ministry of Agriculture, is dedicated to providing the latest in industry news and health information about European extra virgin olive oil. Extra virgin olive oil enhances the flavors of your recipes while providing health benefits. Flavor Your Life campaign, the voice of olive oil production quality control, aims to educate consumers so they can make informed decisions when purchasing olive oil.
