To Celebrate the Launch of the New Stuffing Made with Natural Ingredients, Rudi’s Gluten-Free Will Give Away Fun ‘Stuff’ From Nov. 4-13, 2013

Rudi’s Gluten-Free Bakery® is celebrating the recent launch of its Gluten-Free Savory Herb Stuffing this November, just in time for the holidays. The new stuffing is made with Rudi’s Gluten-Free Multigrain and Original Sandwich Breads, which were recognized by KIWI magazine’s awards for “Best Kid Food” for their superior taste and clean ingredients—think yummy natural ingredients that you can pronounce like rice flour and honey. The introduction of gluten-free stuffing is a natural extension of Rudi’s mission to provide families that have gluten dietary restrictions with the same opportunity to enjoy the flavors of the season.

To celebrate the new Gluten-Free Savory Herb Stuffing, Rudi’s Gluten-Free today launched a 10-day “More Fun Stuff(ing) Giveaway” on Facebook. Since families will save time this holiday season by making Rudi’s Gluten-Free Stuffing (ready in five minutes), Rudi’s is giving away one daily prize for 10 days of fun “stuff ” that fans can use to enjoy the holidays with their family.

In addition to entering to win the daily “stuff ” prizes, fans can also download a coupon for $1 off Rudi’s Gluten-Free Savory Herb Stuffing through the More Fun Stuff(ing) giveaway app. To inspire home cooks to get creative in the kitchen, Rudi’s Gluten-Free will be sharing delicious gluten-free stuffing recipes created by top gluten-free bloggers, including Ashley Reynolds at “The Reynolds Mom,” and Chandice Probst at Gluten-Free Frenzy. For instance, Ashley Reynolds will be featured on Nov. 5 for creating the following “Cranberry Pecan Feta Cheese Stuffing” recipe.

Cranberry Pecan Feta Cheese Gluten-Free Stuffing

1 Cup Red Onion, Diced
1 cup Celery, Diced
2 Tablespoons Butter
1/3 Cup Pecans, chopped
3/4 Cup Cranberries (chopped if desired), divided
3/4 Cup Feta Cheese, divided
12 oz package Rudi's Gluten-Free Savory Herb Stuffing
2 1/4 Cups Chicken Broth/Stock


1. Preheat oven to 400 degrees.
2. Saute onion and celery in butter for 5 minutes, stirring frequently.
3. Add pecans and 1/2 cup cranberries and stir. Then pour entire mixture into a large mixing bowl.
4. Add Rudi's Gluten-Free Stuffing and 1/2 cup feta cheese. Stir.
5. Slowly add chicken broth while stirring. Add egg and stir.
6. Transfer mixture to a 13 x 9 dish, and gently press mixture down. Top with remainder of feta cheese and cranberries.
7. Cover and place in oven for 25 minutes. Remove cover and cook an additional 15 minutes for a crunchy top.

Serve while warm and enjoy! Serves 8.

Recipe Note:
As is, this recipe can be salty for some. To reduce the salt content, you may wish to find a low-sodium chicken broth, use just water, or a combination of the two. You can also use less Feta cheese.
