Farm to Table Cuisine is Featured as the Subject of New Jimmy Johnson-Hosted "Leading Edge" Segment

Healthy and locally inspired cuisine is making waves in the culinary community.

Local foods and farm to table cuisine have become new buzz words in our society, but what do they really mean? Farm to table cuisine refers to the food from activities such as gardening, farmer's markets, community-supported agriculture and local-foods menus at restaurants. The ideals promoted in farm to table cuisine include using food that is local, fresh and in season. While this may cut out strawberry shortcake in November, the pumpkin pie from these establishments can be truly divine because of fresher, in-season produce used in the recipes. Purchasing local foods also helps keep jobs and money in the local economy, supporting and helping promote local businesses and industries.

With an eye to environmentally-friendly agriculture and the carbon footprint that excessive food miles can cost, consumers and farmers around the country are banding together to promote local foods. Recognizing the importance of securing our food supply, "Leading Edge with Jimmy Johnson" is taping an informative piece on this topic for Public Television in order to inform the general public about the activities and importance of farm to table cuisine.

The series has previously presented agricultural pieces on responsible farming to help bring information and issues with these agricultural areas and practices to the general public.
