Flavor Your Life offers these 2 delicious appetizers made with olive oil that are quick and easy to prepare:
• Three color salad - Start with 4 tomatoes, capers, lemon juice, cucumbers, salt and pepper, fresh basil and extra virgin olive oil. Cut all the vegetables and place the green ones on a plate first. Cut up buffalo mozzarella and place in the middle of the plate. Top off with tomatoes and sprinkle the basil, capers and lemon juice on top. Add a drizzle of extra virgin olive oil and salt and pepper.
• Bruschette Surf and Turf - Start with large Tuscan slides of bread, raw shrimp, tomatoes, 2 hardboiled egg yolks, green beans, basil, carrots, celery, garlic, lemon juice, onion and a fruity tasting extra virgin olive oil. Chop the beans, boil and drain.
Make a broth by boiling celery, onions, carrots and garlic. Remove the vegetables after 10 minutes and add the shrimp to the broth. Cook the shrimp for 5 minutes and add to the beans after it has been strained. Make a dressing with the extra virgin olive oil, egg yolks, parsley and lemon juice. Mix everything together and serve on bread. Drizzle extra virgin olive oil over the top to finish.
