Alex Italian restaurant, focused on authentic Italian cuisine, appointed Riccardo Bilotta as its new executive chef, in the hope that his culinary achievements will bring a new dimension to the already renowned restaurant.
Originally from Trieste, Italy, Chef Riccardo Bilotta brings over 13 years of experience gained while cooking at some of Europe’s most prestigious restaurants, such as the ﬁve-star “Regina Baglioni” Hotel in Rome; the ﬁve-star, Relax&Château and two-Michelin star “Il Pellicano” Hotel on the coast of Tuscany during the era of Chef Antonio Guida, a diseple of Pierre Gagnaire. Bilotta started his fine dining career at the two-Michelin star “La Broche” in the kitchen ran from famous Spanish chef and “El Bulli” alumnus Sergi Arola, followed by an experience at the Michelin-star Zaranda, under the supervision of Chef Fernando Arellano in Madrid. In 2007 he joined the team of “El Celler de Can Roca”, three-Michelin star, owned and ran by three famous brother Joan, Josep and Jordi Roca, and now acclaimed as number one restaurant worldwide, in the north of Spain. Bilotta made his name in the New York dining scene as the executive chef of Tarallucci e Vino in Manahattan taking on the challenge of raising the standing of the restaurant.
Upon meeting master of sommelier Alessandro Sbrendola and his wife, Alessia, he instantly recognized a dynamic opportunity. While marrying his creative signature style of cooking to a philosophy for honest, creative dishes, made from scratch with the best possibly sourced ingredients, he established a 360 degrees connection with the owners and their vision.
Highlights of the new menu include “Lingua Tonnata”, a modern interpretation of the classic “Vitello Tonnato”, made with veal tongue over creamy, tuna and capers sauce as well as, “White Caciucco”, again Chef's modern interpretation of Tuscany traditional seafood chowder.
The pasta program is strictly in-house, offering diners a range of fresh pastas from Pappardelle with braised rabbit to Spaghetti alla Chitarra, made with the “Guitar”, an antique wood tool.
A must, “leave a room for dessert”, as Chef's secret passion for dessert explodes in a vast array of flavors and sensation in his exquisite creative list; soon to launch new menu and tasting menus.
In addition to offering delicious, authentic and modern Italian food, Alex Italian Restaurant is known for its excellent wine program. Alessandro Sbrendola, master of Sommelier, and his wife, Alessia, also a sommelier, have expertly crafted the wine list to complement Bilotta’s cuisine, offering Old World and New World wines, something for all palates, including a 10-page selection of Cabernets.
