The last few weeks of summer are upon us, but football season is just around the corner, and that means it’s time for tailgating with family and friends! The Get Maine Lobster BLT Tailgate Roll pairs the classic combination of Maine lobster and bacon with a touch of smokiness from chipotle peppers and the refreshing crisp of apples for the perfect game-time meal.
Ingredients for the Bacon Chipotle Mayo include one half teaspoon of canned chipotle peppers, minced; one half cup of mayonnaise; two tablespoons of bacon, crisped and minced; one tablespoon of finely diced apple that has been skinned and cored; one half teaspoon of garlic powder; one half teaspoon of onion powder; and a squeeze of lemon juice. For the lobster roll, ingredients include a whole Maine lobster, cooked and de-shelled (two each at 1.2 to 1.4 pounds); four to five tablespoons of the Bacon Chipotle Mayo; two cups of shredded romaine lettuce; a tomato, halved and sliced one quarter of an inch; four New England-style hot dog buns; butter at room temperature and salt to taste.
To prepare the Bacon Chipotle Mayo, crisp the finely chopped bacon in a large non-stick pan over medium heat. Once the bacon is crispy, transfer it to a paper towel on a plate to remove any excess fat. Next, toss the apples with a squeeze of lemon juice to prevent oxidization. Finally, in a mixing bowl combine all ingredients and season to taste. Store cold.
To prepare the lobster roll, boil a large pot of heavily salted water. Dunk the lobsters in head first, and then cover and cook for 9-11 minutes or until they are bright red and the antennas come off with a very light tug. Transfer the lobsters into an ice bath and cool them down enough to handle. Break down the lobsters and extract meat from the claws, knuckles, legs and tail. Chop the tail meat roughly into bite sized pieces.
Next, mix the lobster meat with four to five tablespoons of bacon chipotle mayo. Refrigerate the mix for a few hours to help develop even more delicious flavor. Then, smear the outsides of the top-split hot dog buns with butter and toast in a non-stick pan over medium heat until the sides are golden brown. Smear a little bacon chipotle mayo to the inside of the rolls, and add the lettuce and tomato slices. Finally, fill the rest with a generous portion of the lobster mix and enjoy!
