For the appetizer, try a three color salad (preparation time: twenty minutes). The ingredients are 2 one-pound balls of buffalo mozzarella, 4 tomatoes, 3 cucumbers, capers, lemon juice, delicate extra virgin olive oil, salt, pepper, and fresh basil.
To prepare these ingredients you must first wash/cut the vegetables and then separate the green vegetables from the rest. Once separated and placed on a plate, slice and add the mozzarella in the middleof the plate, then cover with tomatoes. Sprinkle on capers and basil, season with lemon juice, olive oil, salt, and a tad bit of pepper. Once this is completed,your appetizer is ready for enjoyment.
The next course of the meal is the primary course called Pugliese Style Orecchiette. The ingredients for this course are 1 ¼ cup orecchiette pasta, 1 ½ cup cherry tomatoes, 1 cup cacioricotta cheese, extra virgin olive oil, basil and salt. To prepare the course, you must cut the tomatoes into small cubes. Place the cubes in a large serving bowl and season with salt. Boil a large pan of water, add salt and cook the pasta. Mix the ingredients with pasta after it has been cooked and strained. Add in a few basil leaves, sprinkle on the cheese and drizzle extra virgin olive oil over the dish.
The final portion of the meal is dessert. The dessert that will top the entire meal is a sweet cake with extra virgin olive oil. This dessert is a delicious way to end a healthy and tasty meal.
The ingredients for the dessert are 1 cup of citrus fruit yogurt, 1 cup of extra virgin olive oil, 2 cups of sugar, 3 cups of flour, 3 eggs, 1 tbsp of baking powder and the rind of one shaved lemon. Preheat the oven to 180 degrees. Place all of the ingredients in a bowl and mix well. Once mixed,bake for 30 minutes and then add icing if you like.
