Burrissimo™ Fast Fresh Italian, the fast-casual newcomer that introduced its signature Italian Burrito to Orange County diners late last year, is on track to open its second location in the Brea Gateway Center in Downtown Brea on Tuesday, September 17th. With the opening of the second location, Burrissimo introduces high quality, artisan pizzas using a gas-fired stone hearth pizza oven.

Burrissimo™ Fast Fresh Italian, the fast-casual newcomer that introduced its signature Italian Burrito to Orange County diners late last year, is on track to open its second location in the Brea Gateway Center in Downtown Brea on Tuesday, September 17th. With the opening of the second location, Burrissimo introduces high quality, artisan pizzas using a gas-fired stone hearth pizza oven. Burrissimo will support the Cystic Fibrosis Foundation’s Orange County Chapter by donating $1 for every dessert pizza purchased and 10% of all Gift Cards sold on Opening Day.

Burrissimo™ Fast Fresh Italian is Italian reinvented! “Guests choose an entrée at the counter and we build it to their specifications, assembly-line style,” said Burrissimo founder and owner, John Parlet. Entrée choices include Burrissimo’s signature Italian burrito, a pasta bowl or salad bowl - and now in Brea - a 10” artisan pizza, with gluten free crust available upon request. “With all of our fresh toppings and homemade sauces, pizza is a natural addition to our entrée choices. We make the dough fresh daily, top it to our guests’ specifications, and bake it in our pizza oven right in front of the guest in only about three minutes,” explained Parlet.

Burrissimo also offers entrée “Favorites” – pre-selected combinations of ingredients – for the indecisive. Side items include freshly baked garlic knots served with choice of dipping sauce and spinach & artichoke dip with Italian chips. For dessert, Burrissimo serves 7” dessert pizzas topped with nutella, powdered sugar and berry drizzle or cinnamon sugar with vanilla icing drizzle. Beverage options include Italian sodas & fountain drinks, tea & lemonade, organic regular and chocolate milk, bottle water, and beer & wine. Kid’s meals are also offered.

To further develop the menu, Parlet brought in Chef Consultant, Isabella Pedroli, a self-professed Italophile formerly of Angelini Osteria and Bestia in Los Angeles. “Using the established menu as a starting point, my goals were to develop house-made recipes to create flavors reminiscent of rustic, Italian favorites. I'm proud to say that today EVERYTHING is made on site at Burrissimo: dressings, sauces, vegetables, marinades -- the list is all encompassing! The walk-in refrigerator is a testament to the high quality standards and products that differentiate Burrissimo from other fast-casual concepts: fresh produce, fresh herbs that serve as undertones for the new recipes (basil, sage, rosemary and marjoram), daily-made sauces, et cetera,” said Pedroli.

“Choosing to be in the restaurant industry for the long haul, I try to understand all the different aspects that comprise a successful establishment. Beyond the culinary aspect, I find great value in every facet of the Burrissimo operation. The systems in place for inventory keeping, waste management, and daily production are incredible,” said Pedroli, “Most importantly, I have loved witnessing a genuine sense of hospitality from all the staff (corporate management to team member) to the guests -- it differentiates Burrissimo from most restaurants in its price category. Values that trickle down from the top, it all starts with Mr. Parlet, who could not be more friendly and down-to-earth; if the boss has his heart in the right place, so too will the entire team. About John Parlet, Owner and Founder Burrissimo™ Fast Fresh Italian
In an increasingly competitive landscape, Burrissimo is positioned to fill a popular void. “My goal was to create something uniquely different from what has been done before, and with a menu diverse enough so that there is something for everyone, with lots of healthy options using locally sourced products wherever possible,” said founder and owner, John Parlet.

Parlet has had a successful restaurant career that began over 40 years ago in his hometown of Winner, South Dakota. In addition to Burrissimo Fast Fresh Italian, he is also the owner and founder John’s Incredible Pizza Company, an indoor fun-center averaging 50,000 square feet in size with food, rides and games. Founded in 1997, he opened the first John’s Incredible Pizza Company in Victorville, CA. This 16,000 square foot location was soon followed by a 26,000 square foot store in Bakersfield in 1998, and then an even larger 53,000 square foot store in Fresno in 2000 which became the model footprint. Other locations followed over the years, including the most recent location in Beaverton, Oregon in March 2011.

John’s currently has ten locations, nine in California and the newest in Oregon, with projected plans to expand throughout the United States.
